CHICKEN SOUP FOR THE SOUL

A couple weeks ago I came down with a nasty cold. After class at Flywheel my friend Jill surprised me with a big bowl of chicken soup. I’m not going to say the soup was magic, but I will say I felt much better the next day.

CHICKEN SOUP FOR THE SOUL RECIPE

1 Whole organic farmers market chicken(2-3lbs.)You may want to buy cut in Quarters

4-6 large organic carrots( rainbow carrots are fun too!)

4-6 stalks organic celery

1 knot celery root

1 med fennel

2-4 organic parsnip

1-3 organic leek

*optional fresh organic dill garnish

* optional fresh organic cilantro  

Garlic 3-4 cloves

EVOO  2-4 tablespoon

!st submerge  chicken in lemon juice , kosher salt and water  for 40 min or so. Cut chicken up in quarters .

In a  large iron skillet (med – High heat)  add your EVOO and minced garlic and a dash of Kosher salt then add you chicken. The point is to brown the chicken and save the juices , this forms the penicillin , so to speak … This is the most important part of the soup!

Take chicken out after browned on both sides, save oil and garlic bits  in small bowl and place chicken on paper towel on plate pause…

Fast forward to your 4 quart of boiling water with 2 teaspoon kosher salt!

Add your chicken and garlic bits cook that chicken until bones start to show on legs , I cook from my heart so I don’t know times so well. Approx. 35-40 min.

Remove chicken from pot with tongs and strain broth, this will ensure your soup stays nice and clear. Now you can rid yourself of the bits. Although I like the bits later…

Pour broth back in a cleaned pot then chop ALL your veggies , the way you like them and add to your broth and cook PAUSE…

I like my soup a little chunks so I cut so my veggies a bit smaller

Let chicken cool for a little while… on paper towel on a plate 20 min

Remove skin from chicken and pull meat off and cut up chicken into mouth size chunks no bones no grizzle!

Add you chicken to your broth and veggies cook until desired! Add kosher salt to your taste!

You can always cook your favorite noodles rice or vegetable noodles… on the side and add, I like to add Quinoa elbow noodles.

If you use cilantro as your garnish add a couple of corn chips!

I like mine clean clean so I add a sprig of dill for color!
